Everyone loves hot chocolate!
Okay… Not true. I do love it, but I really couldn’t drink it. I liked the idea of it. So I had to make my own hot chocolate from scratch. Ugh. I need a mix. Good thing the internet exists and explains how to make mixes. But I can’t use their recipe. This will be easy enough.
Hot Chocolate Mix
Ingredients::
- 2 c confectioner’s sugar
- 2 c powdered rice milk (READ THE LABEL; many contain more than just powdered milk)
- 1 c dutch processed cocoa
- Hot water
Equipment::
- air tight container
- tea kettle (opt)
- mug
Directions::
- Combine the sugar, milk, and cocoa in the air tight container. Shake really well.
- Before scooping out the desired amount, shake again.
- Place several heaping tablespoons of mix into mug.
- Add hot water and stir.
- Caution it will be hot!
Notes::
- Add any flavoring you want. Dry spices can go into the mix. Wet flavorants go into the mug with hot water.
- Want marshmallows? Read the ingredients carefully (I know it should just be sugar, it rarely is).
- Other random additions are fine. Treat it the same you would a packet of hot chocolate mix.
- Dutch processed is not required, only recommended.
- Powdered rice milk can be replaced with another powdered milk that is safe for those drinking.

Hot Chocolate Mix Single Cup
Ingredients::
- 1 Tbsp powdered rice milk
- 1 Tbsp powdered sugar
- 1/2 Tbsp dutch processed cocoa
- hot water
Equipment::
- Mug
- tea kettle (opt)
Directions::
- Heat up water.
- Put the powdered rice milk, the powdered sugar, and the cocoa into the mug.
- Stir as much as desired.
- Pour in the hot water.
- Stir.
- Enjoy! Caution the beverage will be hot.
Notes::
- Dutch Processed Cocoa is not required only suggested. Any cocoa will work.
- Want marshmallows? Read the ingredients carefully (I know it should just be sugar, it rarely is).
- Other random additions are fine. Treat it the same you would a packet of hot chocolate mix.
- Powdered rice milk can be replaced with another powdered milk that is safe for those drinking.
- If you want to cool it off quickly, don’t fill it with hot water. Leave some room to add in your milk of choice. I drink almond milk normally, even if powdered rice is the choice for this recipe. So I add in almond milk to cool it down fast.

You’re right! Who actually has powdered rice milk? That took days to acquire and you want hot chocolate now. Sorry to say, no powder, no “instant”. But I can explain how to make it from scratch as if you’re from olden times… Not really. Even this is made for modern times. You probably wouldn’t like what Montezuma drank anyway.
Hot Chocolate from Scratch
Ingredients::
- 2 c almond milk
- 1/3 c chocolate chips
- 1 T confectioner’s sugar
- 1 T cocoa powder
Equipment::
- Pot
- whisk
- cups
Directions::
1. Put the almond milk into the pot set for medium heat on the stove top.
2. Add in the chocolate chips. Whisk well.
- Any time you have melting chocolate or heating milk, you must keep up the whisking. Even a few seconds can cause burning or film on top of the liquid.
3. When the chips are melted, add in the rest of the ingredients. Whisk well.
- Add any spices here.
4. Once everything is fully melted and well mixed, remove from heat and pour into the cups.
- Add any flavorings after removal from heat.
Notes::
- Can’t have almond? Use any other milk such as rice or soy.
- Chocolate chips are normally a concern for allergen sufferers. I use Enjoy Life’s Mini Chips, which should be safe for everyone. Find one that suits everyone involved.
- If the hot chocolate needs more body, add more chips to be melted during cooking phase. If it needs to be sweeter, add in more sugar. If it needs to be looser, add in more milk. If you want a more intense chocolate flavor, add in more cocoa.
